Ginger & Stewed Apple Quinoa Porridge



  • 1/2 cup quinoa
  • 1 cup coconut milk (or choice of milk)
  • 1 1/2 cinnamon quills
  • 1 tsp fresh grated ginger
  • 1 tsp maple syrup
  • 1 peeled and segmented apple
  • 1 tsp coconut oil
  • 1 tsp water



Place quinoa, coconut milk, one cinnamon quill and maple syrup into a medium saucepan on a medium heat and bring to a simmer.

Cook, stirring occasionally for 10-12 minutes or until quinoa is absorbed with a soft texture.

In a separate small saucepan combine the coconut oil, water, apple and the remaining 1/2 a cinnamon quill.

Sauté apples until they are golden brown.

Combine together in a separate serving bowl.

Serve warm & Enjoy
