Pearl Cous Cous & Pomegranate Salad


Ingredients

 

  • 1 c Pearl Cous Cous
  • 1/2 c Lentils
  • 1/2 c Chickpeas
  • 1 cubed Cucumber 
  • 1 cubed Avocado
  • 1 Pomegranate
  • Handful of Fresh Chopped Coriander
  • 200g cubed Feta
  • Lemon

 

Method

 

Follow package instructions to cook cous cous.

In a separate bowl prepare the chickpeas, lentils, cucumber, pomegranate, feta and coriander.

Softly turn through mixture.

Once cous cous is cooked, cooled and drained. Add cos cos to salad bowl. 

Drizzle with some freshly squeezed lemon juice.
