Pumpkin Soup with Roasted Chicken


  • 1 Whole Pumpkin (cut into cubes)
  • 3 Large Garlic Cloves
  • 1 Chicken Breast (Sliced)
  • Extra Virgin Olive Oil
  • 1 c Organic Full Cream Milk
  • Hemp Seeds (optional)



Prepare two oven trays with baking paper. Place pumpkin pieces and garlic on one tray and sliced chicken pieces on the other.

Drizzle with EVOO and place both trays in the oven on a high heat (200).

Roast for 20-25 mins until both components are cooked well. 

Once cooked well, pull out and allow pumpkin to cool. 

Place the pumpkin, garlic, sea salt and pepper in either a blender or food processor and blend. Slowly add in your milk until you reach a desired texture. You may require more or less than 1 cup of milk dependant on your own personal choice.

Serve in a bowl, topped with roasted chicken & hemp seeds (optional)
